INGREDIENTS

  • 1lb. Ground Lamb
  • 1lb. Groud Beef
  • 1/2 Onion & 1 Shallot
  • ½ Bunch Parsley
  • ½ Cup Fresh Mint
  • 2 Garlic Cloves
  • 2 tbsp Coriander
  • 2 tsp Cumin
  • 2 tsp Coriander
  • 2 tsp Paprika
  • 2 tsp Cinnamon
  • 1 tsp Cayenne Pepper
  • 1 ½ tsp Baking Soda
  • Salt and Black Pepper

INSTRUCTIONS:

  • In a mini food processor add onion, shallot, garlic cloves, parsley, mint with salt, pepper and pulse.
  • In a bowl add ground lamb and beef, green seasoning mix with spices . Mix together with your hands or spoon until combined.
  • Soak wooden skewers for 30 minutes prior to threading the meat.
  • With damp hands, divide the meat into equal pieces and push and shape the meat onto skewers. Make them smooth.
  • Preheat oil on a large griddle over medium high heat.
  • Rotate to brown all over. Be sure to get good char marks.
