INGREDIENTS
- 1lb. Ground Lamb
- 1lb. Groud Beef
- 1/2 Onion & 1 Shallot
- ½ Bunch Parsley
- ½ Cup Fresh Mint
- 2 Garlic Cloves
- 2 tbsp Coriander
- 2 tsp Cumin
- 2 tsp Coriander
- 2 tsp Paprika
- 2 tsp Cinnamon
- 1 tsp Cayenne Pepper
- 1 ½ tsp Baking Soda
- Salt and Black Pepper
INSTRUCTIONS:
- In a mini food processor add onion, shallot, garlic cloves, parsley, mint with salt, pepper and pulse.
- In a bowl add ground lamb and beef, green seasoning mix with spices . Mix together with your hands or spoon until combined.
- Soak wooden skewers for 30 minutes prior to threading the meat.
- With damp hands, divide the meat into equal pieces and push and shape the meat onto skewers. Make them smooth.
- Preheat oil on a large griddle over medium high heat.
- Rotate to brown all over. Be sure to get good char marks.
